Recipe – Sesame and Soy Poached Salmon with Hummus and Spinach

This is a go to weeknight dinner around Dinner Well Done.  It is easy to put together and is something that both adults and kids enjoy.  Around here the kids especially love the salmon flavour combined with the creaminess of the hummus.  This is a recipe that can even be served at a dinner party with a little creative plating (the flavours are that good!).

Salmon

4 Salmon fillets

1/4 cup Soy sauce

1 tsp Sesame oil

2 cloves Garlic (grated)

1/4 cup Ginger (grated)

1/2 Lemon (juice from)

1 cup Water

Hummus

1 can Chickpeas

1 clove Garlic

1/2 Lemon (juice from)

to taste Salt and pepper

as required Olive oil

Spinach

1 bunch Spinach

2 tbsp Olive oil

to taste Salt and pepper

Directions

Combine soy sauce, sesame oil, garlic, ginger, lemon juice and water in oven proof container.

Place salmon in poaching liquid skin side up. Cook in a 300 F oven for 15 minutes (or until cooked through depending on thickness).  Reduce the left over marinating liquid in a sauce pan by bringing it to a boil for 10 minutes (use as a sauce for the finished dish)

Drain and rinse chickpeas. Place in food processor with garlic (grated), lemon juice, salt and pepper. Blend adding olive oil until a smooth consistency is achieved.

Heat olive oil in a pan, add raw spinach, salt and pepper to taste and cook until wilted.
