The secret to thick rich tzatziki is to use Greek yogurt (or if you can’t find it to thicken your own yogurt by straining the yogurt through cheesecloth). One of our team members at Dinner Well Done lived in the Greek section of town and swears that all the best tzatziki is finished with a bit of good olive oil, so we decided to try it and we love it!
Serve this versatile sauce with any dinner that can use a little punch of extra flavour, especially grilled meats.
1/2 cup Greek yogurt
1/2 tsp Dill (finely chopped)
1 clove Garlic (grated)
1 tbsp Olive Oil
1/2 Lemon (juice only)
to taste Salt and Pepper
Dice the cucumber, grate the garlic and finely chop the dill.
Combine the yogurt, cucumber (setting aside a few pieces to garnish with), garlic, dill, lemon juice and olive oil and stir to combine. Salt and pepper to taste.
Top with some reserved chopped cucumber, a sprig of dill and sprinkle with olive oil.
This goes really well with recipes such as Lamb Chops with Slow Cooked Eggplant and Greek Greens.
